The premise of the 'The Improvisational Cook' is that by understanding the underlying principles and logic of a recipe and the possibilities for changing it, you have the tools to be an improvisational cook.
Each main recipe-take, for instance, Slow-Roasted Tomatoes -- is a worthy addition to any cook's repertoire as well as a jumping off point for improvising. The "understanding" section follows and suggests how to play with, alter, adapt, or embellish the main recipe. To the tomatoes, add herbs of choosing or a spice blend such as her Moroccan Seasoning with Cinnamon, Coriander and Cumin. Layer them on pizza dough or into casseroles. Chopped or pureed, they make a great sauce. Sweetened with honey or brown sugar, they become savory jams. Then, specific improvisational recipes are offered: Slow-Roasted Tomatoes with Warm Goat Cheese, Puttanesca Sauce, Tomato Soup, Tomato Tart, and Tomato Jam.
